The most typical dishes of Gata are steeped in tradition and their aroma brings back memories of our ancestors, who passed down the recipes generation after generation.

One of the ones that most characterizes us is Coques. If you don’t know them, you can’t stop reading this post! And if you have already tried them, you will surely love to know a little more about them.

 

Coca is one of the most memorable gastronomic expressions of Gata. There are many recipes to make coca, but the base is always the same: flour, yeast, water, oil and fine salt.

 

 

These are generally round bread dough of about 5 to 10 centimeters with a thin, spongy dough and an extraordinary wood-fired aroma if it has been prepared in the wood oven.  But, don’t worry if you don’t have a wood oven, they also look great and delicious at home.

To season them, the most typical thing is to do it with mullador (pepper, tomato and eggplant) but also with onion and peas, herbs (field herbs that are harvested the same day), onion alone or spinach or chard. They are usually accompanied by sausage or salted meats.

 

 

If you want to keep it simple, coke oil is yours! It only has a splash of olive oil and an anchovy.

Cocas are a social dish. The day cokes are eaten, the whole family has to make them and the day becomes a party.

You have to toast the vegetables in the oven, peel them and prepare them to make the mullador, cook the onion until it caramelizes, cook the peas, even go and make herbs before making the dough. Then everyone together kneads and fills the cokes. They are put on the flats and baked! In a wood-fired oven they will be done in about 4-5 minutes with good coals and in a normal oven (light) it usually takes about 15 minutes.
