ORIGIN OF THE SOBRASADA

Sausages in general have a very ancient origin since they tried to keep the meat in good condition for as long as possible. In the Balearic Islands is where this food begins to be produced with that of the Roman Empire.

The sobrasada commonly known as Sobrasada Mallorquina, arrived in the Marina Alta in 1609, when the Mallorcan settlers, after the expulsion of the Moors, made this delicious artisan sausage in the towns of the Marina.

ELABORATION

Each butcher has his own touch and stays true to his secret recipe, but La Marina’s sobrasada is made mainly with lean meat and pork belly from the Duroc breed, salt and spices such as paprika and black pepper. It will then be stuffed into natural pig casings and will have to be cured for a minimum of 5 months.

DIFFERENT TYPES OF SOBRASADA AND HOW TO EAT IT.

Not only will you find the Sobrasada de La Marina… Different types are also made, such as the sobrasada longaniza, used to grill, in the typical cocas of the area or to add to a stew.

You can also buy it cured and you can eat it directly without cooking. The difference with the previous one is that it is left to mature for a couple of months.

You can eat all of them accompanied by bread, grilled, with honey and fresh cheese, in cocas, spread directly on the slice of bread, in your dishes such as pasta or eggs with potatoes… Mouth waters just thinking about it!

CAN POLACA – MARZA BUTCHER SHOP

Founded in 1910 by Pepe Marzal Badia, Can Polaca is a butcher shop deeply rooted in Gata’s commerce. For over four generations, traditional recipes for crafting artisanal sausages have been passed down from parent to child. Our specialties include sobrasada and bisbe, along with a variety of sausages, sweet or spicy onion morcillas, and red or white blanquets.

Today, the butcher shop remains in its long-standing location in the Raval neighborhood, now managed by the fourth generation. We stay true to tradition, offering high-quality artisanal products, made in-house, in a shop that has always been part of the community.

CARNISSERIA PEIXET

Peixet also tells a lot of history. This butcher shop is still in the same place it has always been, preserving its character, its decoration and even its doors. As you enter it you can imagine what it was like to shop here 50 years ago. Here you will find homemade sausages that transmit history and select meats among other products such as legumes and bulk nuts.

An example of the town culture that we have in Gata is the synergy that is created between local businesses and businessmen, who support each other to show the know-how of an entire town. An example is the Cosa Nostra Pizzeria, which has a sobrasada pizza called Ca Curro and whose name comes from the store where they buy it.
